Kielbasa Noodle Casserole

A hearty casserole. Good served with a salad, and bread.

Kielbasa Noodle Casserole
8 to 10 slices rye bread (with or without caraway seeds)
1 medium chopped onion
1/2 lb. your favorite kind of ground pork
1 tbsp. + 2 tbsp. softened butter, plus extra for buttering bread slices
2 tbsp. melted butter
2 lbs. sauerkraut, rinsed and very well drained
2 10 1/2oz. cans cream of celery soup
1 1/2 c. milk
1 tbsp. prepared yellow mustard
1/2 lb. medium wide egg noodles, cooked al dente, drained, (8oz.)
1 1/2 lbs. kielbasa, cut into 1/2" thick pieces
1 1/2 c. shredded Swiss cheese
Preheat oven to 350. Will need a large casserole dish.
Shred about 2 slices of bread, to make 1/2 - 3/4 c. of rye bread crumbs, and set aside.
Butter enough of the remaining bread, buttered side down, to line the bottom of a large casserole.
Saute 1/2 the onions and the ground pork with 1 tbsp. butter, until onions are lightly browned.
Mix the sauteed onion, pork and any drippings with the sauerkraut.
Spread sauerkraut mixture evenly over the bread in casserole pan.
Spread noodles evenly over the sauerkraut mixture.
Using the same pan, add 2 tbsp. butter and saute remaining onions.
Add the soup, milk, and mustard stir to mix well.
Pour the sauce mixture evenly over the noodles.
Cover noodles with a layer of the kielbasa.
Mix 2 tbsp. melted butter with the bread crumbs you made above, and sprinkle on top of the kielbasa.
Cover casserole pan tightly with foil.
Bake for about 25 - 35 minutes, or until noodles are tender.
Remove foil cover and sprinkle the top of casserole with the shredded cheese.
Return to oven, uncovered, and bake about another 10 minutes or until cheese is melted and bubbly.
Makes 6 servings.
