leftover - Turkey Casserole
1 6oz. pkg. converted wild rice
2 tbsp. butter
1 lb. bulk sausage
3 c. chopped leftover turkey or chicken
1 10 3/4oz. can cream of celery soup
1 10 3/4oz. can cream of chicken soup
1 40z. can button mushrooms
1/4 c. freshly grated Parmesan cheese
Preheat the oven to 400. Coat a casserole dish with non stick cooking spray.
Cook the rice according to the package directions, plus adding the 2 tbsp. of butter.
Saute the sausage; then drain.
Mix the soups together.
Make layers: first the sausage, then the turkey, then the rice, then the soup and then the mushrooms.
Repeat the layers.
Sprinkle with the grated cheese and bake for about 20 minutes, or until lightly brown.
Makes 6 servings.
