    Meat + Pasta Casserole

    8 ounces (2 cups) uncooked Penne or Mostaccioli (tube shaped pasta)
    1 pound lean or extra lean ground beef
    1/2 cup coarsely chopped onion
    2 (15 oz) cans chunky tomato sauce w/onions, celery & green pepper,
    undrained
    2 teaspoons sugar
    1/2 teaspoon cinnamon
    1/4 teaspoon dried Italian seasoning
    6 oz (1 1/2 cups) shredded mozzarella cheese

    Cook Penne to al dente as directed on package. Drain. Meanwhile,
    heat oven to 375ºF. Spray 2-quart casserole or baking dish with nonstick
    cooking spray. In 12-inch skillet, brown ground beef and onion until
    beef is thoroughly cooked. Drain. Stir in tomato sauce, sugar, cinnamon
    and Italian seasoning. Bring to a boil over medium heat, stirring
    occasionally. Remove skillet from heat. Add cooked penne; mix well.
    Layer half of penne mixture in sprayed casserole. Top with half of
    cheese and remaining penne mixture. Spray sheet of foil with nonstick
    cooking spray; cover casserole tightly with foil. Bake at 375ºF. for 20
    minutes. Sprinkle with remaining cheese. Bake uncovered for an
    additional 10 to 15 minutes or until cheese is melted and
    mixture is bubbly.
    Makes 4 (1 3/4 cup) servings.
