Mexican Layer Casserole

Mexican Layer Casserole
1/2 pound extra lean ground beef
1 chopped sweet red bell pepper
1 chopped sweet green bell pepper
1/2 of a large onion, sliced
2 chopped tomatoes
1 Tablespoon chili powder
1 Tablespoon garlic powder
1/2 teaspoon ground black pepper
1/4 teaspoon salt
2 large thinly sliced baking potatoes,
...scrubbed + with skins
3/4 cup shredded low fat Cheddar cheese
Heat oven to 350 degrees F. Coat a 9x13x2 inch baking pan
with cooking spray; set aside.
Cook ground beef, bell peppers and onions in a large skillet,
stirring as needed, until the beef is brown and the vegetables
are softened, about 6-8 minutes.
Add tomatoes, chili powder, garlic powder, salt and pepper.
Simmer until the flavors are blended, stirring as needed,
about 5 minutes.
Place 1/2 of the potatoes on the bottom of the baking dish.
Spread 1/2 of the meat mixture on top.
Place the rest of the potato slices on top of that and then
spread the remaining meat mixture on top.
Cover with foil and bake 40 minutes. Uncover. Sprinkle with
the cheese and continure baking until the potatoes are cooked
through and the cheese melts, about 10 minutes.
Makes 4 servings.
