Reuben Casserole #2
1/2 - 1 pound cooked + chopped corned beef brisket
1/4 cup thousand island salad dressing
1, 16 ounce can sauerkraut, drained & rinsed
1/2 pound shredded Swiss cheese
6 slices rye bread, crumbled
1/4 cup butter, melted
Preheat oven to 350.
Lightly grease a 9x13x2 inch baking dish.
Place corned beef in the baking dish.
Dot with the Russian dressing.
Spread the sauerkraut over that.
Sprinkle with the cheese.
Toss the breadcrumbs with the butter, and sprinkle over
top of the cheese.
Bake for about 30 minutes, or until bubbly.
Makes 6 servings.
