Rice Lasagna
1 pound lean ground beef or bulk pork sausage
1 medium chopped onion, (1/2 cup)
1/4 cup chopped sweet green bell pepper
1, 28 to 32 ounce container your favorite spaghetti sauce
..(I like Hunts roasted onion + garlic)
2 slightly beaten eggs
2 cups low-fat Ricotta cheese
2 cups shredded low fat Mozzarella cheese, (8 ounce package)
4 cups hot cooked rice
1/4 cup grated Parmesan cheese
In large skillet, cook ground beef, onion, and green pepper until
meat is brown. Drain off fat. Stir in spaghetti sauce; heat through.
Meanwhile, in medium bowl, stir together the eggs, Ricotta cheese,
and Mozzarella cheese; set aside.
In 3-quart rectangular baking dish, layer half of the meat-sauce
mixture, half of the cooked rice, and half of the Ricotta cheese
mixture. Repeat layers. Sprinkle with Parmesan cheese. Bake,
uncovered, in a 350 degree F oven about 50 minutes or until top
is golden. Let stand 10 minutes before serving. Makes 8 servings.
