You can use Kielbasa, Knackwurst, or Bratwurst for this hearty
casserole recipe that's perfect for a cold winter night.
Sauerkraut + Sausage Casserole
1 red bell pepper, chopped
1 red onion, chopped
3 cloves garlic, minced
2 Tbsp. white wine vinegar or apple cider vinegar
1 tsp. caraway seeds
1 Tbsp. brown sugar
1 pound smoked fully cooked German sausage, sliced
1, 16 ounce jar sauerkraut, rinsed and drained
Preheat oven to 350 degrees F.
Place all ingredients except sauerkraut in a 2 1/2 quart
baking dish that has been lightly coated with cooking spray
or oil, and mix gently.
Place sauerkraut on top. Cover and bake at until heated
through and bubbly, about 35 to 40 minutes.
Makes 4 - 6 servings.
