    1 tbsp. vegetable oil
    3/4 lb. boneless chicken breast, cut into 1" chunks
    1 3/4 c. chicken broth, (14oz.)
    3 3/4 c. wide egg noodles uncooked, (6oz.)
    1 16oz. pkg. frozen broccoli, carrot and cauliflower mix
    1/4 tsp. ground black pepper
    1 10 3/4oz. can cream of chicken soup
    3/4 c. milk
    1/2 c. + 1/4 c. grated Parmesan cheese, divided

    Recipe



    Put oil in a 5 qt. saucepan and heat. Add chicken. Cook 5 minutes or until no longer pink.
    (You can skip the oil by using left over cooked chicken.)
    Add broth; heat to boiling.
    Add uncooked noodles, vegetables and pepper, stirring to coat noodles with liquid.
    Heat to boiling, then reduce the heat. Cover and simmer 10 minutes, stirring every 2 minutes. (watch, it can burn quickly).
    Meanwhile in a medium bowl, stir together soup, milk and 1/2 c. of the cheese until smooth; stir into chicken mixture.
    Heat through.
    Sprinkle with remaining cheese.
    Makes 4 - 6 servings.
