for the cookies:
1/2 cup butter, (1 stick)
2 tablespoons powdered confectioners sugar
1/2 level cup cornstarch
1/2 cup flour
4, 1 ounce squares dark chocolate
1 tablespoon shortening, (1/2oz.)
for the orange cream:
2 tablespoons butter, (1oz.)
3 tablespoons powdered confectioners sugar
1 teaspoon grated orange rind
2 teaspoons orange juice
Recipe
for the cookies:
Preheat the oven to 375. Lightly grease baking sheets.
Sift the cornstarch and flour together. Set aside.
Cream the butter and sugar together until light and fluffy.
Add the flour mixture and mix well.
Roll teaspoonfuls of the dough into walnut sized balls and place on the baking sheets.
Press down with a fork a few times.
Bake for 10 - 12 minutes or until golden brown.
Remove from the oven and let cool on a wire rack.
Lay out a couple of sheets of foil.
Melt the chocolate and shortening together over a low heat.
Dip the top half of each cookie into the chocolate mixture and place on the foil to set.
for the orange cream:
Sift the confectioners sugar and set aside.
Beat the butter until smooth.
Gradually add the sugar and beat until the mixture is light and creamy.
Beat in the orange rind and juice.
When chocolate on cookies has set, place a dab of the icing on a cookie, on the non chcolated side.
Press another cookie, the non chocolated side against the cream.
Makes approximately 20 "sandwiched" cookies.
