    roll/slice - Cinnamon Log Cookies

    Recipe Introduction

    This is a very fragile, tender cinnamon shortbread type of cookie.

    List of Ingredients

    1 tablespoon ground cinnamon (1 tablespoon is correct)
    3 tablespoons white granulated sugar
    2 cups flour
    1 cup softened butter, (2 sticks)
    1 teaspoon vanilla extract
    assorted sugars
    ...(powdered or granulated/colored, for dusting)

    Recipe

    Preheat oven to 300. Use ungreased cookie sheets.
    Mix together cinnamon, sugar and flour. Set aside.
    Cream butter and vanilla.
    Add flour mixture and mix until the dough is crumbly with separated particles. Continue to beat for about 5 minutes, or until the dough is thick but creamy looking.)
    Divide dough in half.
    Place one piece of dough on waxed paper.
    Roll dough, using your hands, into a log about 1/2" in diameter.
    Cut log into 1 1/2" pieces.
    Transfer to sheets.
    Repeat with the remaining half of dough.
    Bake for 20 - 25 minutes, or until done.
    Cool slightly.
    Roll in sugar. Store in airtight containers.
    Makes about 6 dozen.

    Use care when removing cookies from baking sheets.
    Wrap cookies carefully for freezing.
    Try using different colors of sugar and place each cookie in a petite foil or paper muffin cups.
    These are attractive gifts for any time and they make a nice change of flavor from the usual chocolate chip, sugar or nut cookies.
