Recipe Introduction
I made these cookies for Christmas 2002, and although they were tastey, they seemed on the hard side. I was wondering if anyone else has this recipe and if it should have baking powder or soda in it? Please let me know. Thanks......If you didn't know that there was cream cheese in these cookies, you'd think they were very good, very rich butter cookies.
List of Ingredients

1 cup room temperature, unsalted butter, (2 sticks)
1/2 of an 8 ounce package, room temperature cream cheese
1 cup white granulated sugar
1 room temperature egg yolk
1 teaspoon vanilla extract
2 1/2 cups flour
3/4 teaspoon kosher salt
Preheat the oven to 325. Use ungreased cookie sheets or can use parchment paper.
Place butter, cream cheese and sugar in bowl and mix until smooth. Be sure to scrap down sides of bowl.
Add yolk and vanilla, and mix to combine, scrapping down sides of the bowl again.
Add the flour and salt, and mix until everything is well combined.
Break off small pieces and roll into 1 inch balls.
Place on cookie sheet and flatten each ball into a flat disk using a wet water glass or your clean hand.
OR...
these can be rolled out: Chill the dough until firm, at least 2 hours, roll the dough 1/4 - 1/2 inch thick, and cut with any shape cookie cutter. Carefully transfer to a baking sheet with spatula.
Bake until golden brown, about 14 -16 minutes. Cool for 2 minutes on cookie sheet and then to a rack.
Cool the cookie sheets between batches.
Makes about 3 - 4 dozen.
Baked cookies and the raw dough freeze well.
