    Recipe Introduction

    The dough is soft and you really do not have to refrigerate it, unless you really want to.

    List of Ingredients

    4 1/2 cups flour
    1 level teaspoon baking soda
    1 level teaspoon cream of tartar
    1 teaspoon salt
    1 cup softened butter
    1 cup powdered confectioners sugar
    1 cup white granulated sugar
    2 eggs
    1 cup vegetable oil
    1 teaspoon vanilla extract
    additional white granulated sugar

    Recipe

    In a medium bowl, mix flour, baking soda, cream of tartar and salt. Set aside.
    In a large mixer bowl, beat butter, powdered sugar and granulated sugar until creamy.
    Add eggs and beat well.
    Add oil and vanilla and beat well.
    Beat in dry ingredients. Cover and chill if desired, for 2 hours.
    Preheat oven to 375. Use ungreased baking sheets.
    Using 1 tbsp. of dough at a time, roll into balls and place 2" apart on sheets.
    Flatten with a fork or your fingers and sprinkle additional granulated sugar, if desired.
    Bake for 10 - 12 minutes or until edges are golden brown.
    Cool cookies on wire racks.
