drop - Sauerkraut Cookies
1/2 cup butter, (one stick)
1 cup white granulated sugar
1 egg
1 teaspoon vanilla
1 cup finely cut sauerkraut, rinsed and drained
1 1/2 cup sifted flour
1/4 cup unsweetened cocoa powder, optional
1 level teaspoon baking powder
1/2 level teaspoon baking soda
1/4 teaspoon salt
1 cup raisins
Preheat oven to 375. Grease cookie sheets.
Sift together flour, cocoa, baking powder, baking soda and salt. Set aside.
Cream the butter and sugar together.
Beat the eggs into the sugar mixture.
Add sauerkraut and vanilla to sugar mixture.
Gradually add flour mixture to sauerkraut mixture.
Add raisins last.
Drop by teaspoonfuls on cookie sheet.
Bake for 10 minutes.
Do not over bake.
Remove at once to cool.
