    bar - Chewy Coconut Bars

    2 cups light corn syrup
    1/4 cup butter
    1 cup sugar
    1 teaspoon salt
    1 teaspoon almond extract
    14 ounces flaked coconut
    dipping chocolate
    Butter a 9" square baking pan; set aside.

    In a heavy 2 quart saucepan, combine corn syrup, butter, sugar & salt. Place
    over high heat & stir with a wooden spoon until mixture comes to a boil. Clip
    on candy thermometer. Cook to 242 degrees or soft ball stage. Remove from
    heat & quickly stir in almond extract & coconut. When well-mixed. Scrape into
    prepared pan. Refrigerate until firm. Cut into 1" squares and dip in melted
    chocolate.

    Yield: 81 pieces
