List of Ingredients
1/2 cup softened butter
1 cup white granulated sugar
1 teaspoon vanilla extract
1 egg
1 cup canned solid pack pumpkin puree
2 1/4 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cranberries, cut in halves
1 teaspoon ground cinnamon
1 tablespoon orange zest
1/2 cup chopped walnuts+, optionalRecipe
Preheat oven to 375 degrees F. Grease baking sheets.
Sift together the flour, baking powder and soda, salt and cinnamon. Set aside.
In a large mixing bowl, cream the butter and sugar together
until light and fluffy.
Beat in the vanilla, egg and pumpkin.
Stir the flour and pumpkin mixtures together until well
blended.
Stir in the cranberries, zest and walnuts until well mixed.
Drop by teaspoonfuls onto baking sheets.
Bake for 10 - 12 minutes.
Makes 3 dozen.
