1/2 cup shortening
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
1 (8-ounce) can crushed pineapple
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
Preheat oven to 325 degrees F, grease cookie sheets. In
a large bowl, cream together shortening and brown sugar
until light & fluffy. Add the egg, beat well then stir
in vanilla and pineapple. In another bowl combine
flour, baking powder, baking soda, and salt; gradually
stir into creamed mixture. Drop by rounded spoonfuls
onto the prepared cookie sheet. Bake for 8 to 10
minutes in the preheated oven. Allow cookies to cool on
baking sheet for 5 minutes before removing to a wire
rack to cool completely. Makes 3 dozen.Recipe
