These potato chip cookies are the perfect addition
to any summer barbecue. They're sweet and nutty,
and they'll have your guests begging you for the
secret ingredient. Bet you can't eat just one.
drop - Potato Chip Cookies #2
3/4 cup softened butter
3/4 cup granulated white sugar
1 egg yolk
1 teaspoon vanilla
1 1/4 cups all-purpose flour
3/4 cup crushed potato chips
3/4 cup finely chopped walnuts
3 Tablespoon more of granulated white sugar for dipping
Heat oven to 375 degrees F.
In large mixing bowl, cream butter, sugar, egg yolk and vanilla until light and fluffy.
Add flour, potato chips and walnuts; mix well.
Drop into 1 1/2 inch clumps, placing 3 inches apart on ungreased baking sheet.
(Or roll into balls and set on baking sheet)
Grease the bottom of a glass that is about 3 inches in diameter.
Dip greased glass into sugar and flatten each clump.
Bake for 8 to 10 minutes. Cool slightly before removing from baking sheet.
Cool on wire racks.
Makes about 2 1/2 dozen.
