    drop - Pumpkin Oatmeal Cookies

    1 1/2 cups flour
    1 cup sugar
    1 /2 teaspoon baking soda
    1/4 teaspoon ground nutmeg
    3/4 teaspoon ground cinnamon
    1 teaspoon salt
    3/4 cup butter flavored shortening
    1 beaten egg
    1 cup solid pack, canned pumpkin
    1 3/4 cups rolled oats
    1 cup raisins or chopped nuts,
    ...or 1/2 cup of each, optional

    Preheat oven to 400 degrees F. Use ungreased baking sheets. Use a
    large bowl to stir together flour, sugar, baking soda, nutmeg, cinnamon,
    and salt. Add the shortening and combine until crumbly. Stir in the egg,
    pumpkin, oats and raisins. Drop by teaspoonfuls onto baking sheets.
    Bake for 15 minutes or to your desired doneness. Makes 5 dozen.
