Amaretti (ah-mah-REHT-tee) -
An Italian almond macaroon cookie. The Italian word "amaro" means "bitter,"
and the literal translation of "amaretti" is "the little bitter ones."
Called amaretti
because they are flavored with bitter almonds.
1 cup sweet almonds
1 cup bitter almonds
1/2 cup white granulated sugar
1 teaspoon vanilla flavoring
5 egg whites
2 cups powdered confectioners sugar
Recipe
Butter a baking sheet.
Blanch and toast the almonds. Peel.
Finely chop or crush them with the 1/2 cup sugar.
Add the vanilla and set aside.

Fold whites into the almond mixture.
Spoon the batter into a pastry bag fitted with a 1/2 inch plain tip.
Pipe 2 1/2 inch long rounds about l 1/2 inches apart onto the
baking sheet.

Sift the powdered sugar over the cookies' tops.
Let set at room temperature for 1 to 2 hours.
Preheat oven to 350 degrees F.
Bake for about 20 minutes.
