Finally, this is the recipe I have been looking for,
for a few years now!! Hooray!
roll - Oatmeal Candy Cane Cookies**
1 cup butter
2 teaspoons vanilla
1/2 cup white granulated sugar
2 Tablespoons water
2 1/2 cups sifted flour
1/2 teaspoon salt
1 1/2 cup quick cooking oats
1/2 cup powdered or
...finely chopped nuts of choice, optional
Heat oven to 300/325 degrees F.
Cream butter and vanilla.
Add sugar gradually.
Beat until fluffy.
Mix together flour and salt.
Add gradually to butter mixture.
Stir in oats and nuts.
This dough will be quite stiff.
Roll into logs, and
then carefully shape into candy canes
and place on baking sheet.
Bake for 5 - 8 minutes, until
just very lightly browned.
Remove carefully to wire rack to cool.
Ice if desired.
Recommend icing similar to the sugar cookie
icing, may use just red or a white background
with red stripes.
