pastry:
1, 8 ounce package softened cream cheese
1 cup softened butter, (2 sticks)
2 cups flour
filling:
1 cup fruit preserves or jam
1 tablespoon cornstarch
Mix the preserves into the cornstarch until smooth and
thick. Set aside.
Cream the butter and cream cheese together until smooth
and well blended.
Add the flour, a little at a time, until well blended
and smooth.
Refrigerate dough in a tightly covered container for 2 hours or overnight.
Roll into balls.
Then roll out and cut into pie pieces shape.
Place a dallop of preserves on the wide end.
Roll up towards the point.
Place on ungreased baking sheets.
Bake at 400 degrees F for 7 - 10 minutes, or until the
pastry is a light golden brown.
Makes 5 dozen.
