    roll - Mocha Ball Cookies

    2 cups crushed shortbread cookies
    1 1/4 cups + 1/2 cup sifted powdered confectioners sugar,
    ...divided, plus extra for rolling, if desired
    1 cup powdered or finely chopped nuts
    2 tablespoons unsweetened cocoa powder
    1 1/2 teaspoons instant coffee or expresso
    3/4 teaspoon ground cinnamon
    4 to 5 tablespoons strong brewed coffee or expresso
    ...or water

    Combine the crushed cookies, the 1 1/4 cups sugar,
    nuts, cocoa, coffee crystals and cinnamon together.
    Add just enough strong coffee to moisten.
    Roll into 1 1/4 inch balls and roll generously in the
    1/2 cup sugar.
    Place balls on waxed paper. Let stand until dry,
    about 1 hour.
    Roll balls again before serving, if desired.
    Makes 2 1/2 dozen.

    To store, place in layers, separated by waxed
    paper, in an airtight container. Keep covered.
    May be stored for 3 days at room temperature
    or freeze for up to 3 months.
