We always made this cookie at home while growing
up. The mint wafers have been rather hard to find
in the past years. I couldn't find my copy so after
many tries, I found these with different mint
ingredients. The first one is closest to the way we
use to make them. We just called them "Starlight
Surprise Cookies" cause if you put the mint in the
name, then where is the surprise you are suppose to
get in the middle after biting into it???

3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 cup granulated white sugar
1/2 cup firmly packed brown sugar
2 eggs
2 Tablespoons water
1 teaspoon vanilla
1, 9 ounce package chocolate Starlight Mint wafers
54 walnut halves
Heat oven to 375 degrees F.
Grease baking sheets.
Sift together flour, baking soda and salt and set aside.
Cream butter.
Gradually add sugar and brown sugar and cream well.
Mix in eggs, water and vanilla, and beat well.
Gradually add the dry ingredients and mix thoroughly.
Cover and refrigerate at least 2 hours.
Enclose each chocolate mint wafer in about 1 tablespoon of dough.
Place on baking sheets about 2 inches apart.
Top each cookie with a walnut half.
Bake for 10 to 12 minutes.
Makes about 4 1/2 dozen cookies.

1 cup granulated white sugar
1/2 cup packed brown sugar
3/4 cup butter, softened, or margarine
2 Tablespoons water
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 each mint chocolate wafers, (6 ounces each)
60 walnuts, halved, optional
In a large bowl, blend sugars, butter, water, vanilla and eggs until well mixed.
Lightly spoon flour into measuring cup; level off.
In a medium bowl, combine flour, baking soda and salt; mix well.
Add sugar mixture; mix at low speed until well blended.
Cover; refrigerate at least 2 hours for easier handling.
Heat oven to 375 degrees F.
Using about 1 Tablespoon dough, press around each candy wafer to cover completely.
Place 2 inches apart on ungreased baking sheets.
Top each with walnut half.
Bake for 7 to 9 minutes or until golden brown.

1/2 cup vegetable shortening
1 cup granulated white sugar
1/2 cup packed brown sugar
Andes mints (broken in half)
2 eggs
1 teaspoon vanilla
Walnut halves
Sift together dry ingredients. Set aside.
Mix together butter, shortening, sugar & brown sugar.
Add eggs, water & vanilla.
Add sifted ingredeints.
Refrigerate 1 hour.
Flour hands & shape dough around mint.
Top with walnut half. Bake 10-12 minutes at 325 degrees.
If I am going to bake the next day, I make the dough and
refrigerate overnight.

FYI the instructions include adding water but the ingredients
does not list the amount. I believe it should be 2 tbls. I have
always loved these around Christmas time.

mint substitute from:Barbara (11-17-2008)
I have adapted the recipe by using dark chocolate "buttons"
(available from most chocolate shops)
and adding 1 teaspoon of peppermint extract to the dough.
