This is an old family favorite
We never could make enough of these to have them last through the winter.
Pickled Peppers #1*
Wash sweet green or red bell peppers.
Remove seeds and cut into strips.
Boil in water for 5 minutes.
Drain.
Pack as many as possible, into quart jars.
To the top of each quart add:
1 teaspoon salt
1 Tablespoon oil
In a pot, bring to a boil:
4 cups white vinegar (1 quart)
4 cups water
3 cups granulated white sugar
Pour this hot liquid over peppers in jars and seal.
Makes 4 quarts.
