Pickled Sausage

I found this somewhere on the net. Its really good.
I've made it 7 times and always keep a jar in the fridge. I think these are like the ones you can buy in the store
by the deli depatrment, but you control the heat.
List of Ingredients
Pickled Sausage
2 pounds Polish sausage or Kielbasa, ( I used smoked sausage )
3 med. onions sliced thin
5 carrots, scraped and sliced
1 cup water
2/3 cup brown sugar
3 cup white vinegar
2 tsp. crushed red pepper ( I use 1 tsp. red pepper )
Pack sausage in a 1/2 gal. jar with sliced onions and carrots. Use
cooked sausage and
don't re-cook. Boil rest of ingredients and simmer 5 minutes. Pour over
sausage and let set in refrigerator 2 days before serving.Recipe
