Red Beet Relish
18 large cooked red beets, peeled and diced
9 chopped green peppers
5 medium - large chopped onions
3 3/4 c. cider vinegar
1 1/2 c. water
4 1/2 c. sugar
1 1/2 tsp. salt
3/4 tsp. ground black pepper
1 1/2 - 2 stalks chopped celery
Place the beets, peppers, onions and celery in a large stockpot.
Mix together the vinegar, water, sugar, salt and pepper and add to the chopped/diced vegetables.
Cook for about 30 minutes.
Place into canning jars, leaving 1/2" space at the top.
Make sure there are no air bubbles in the jars.
Put on the lids. Make sure the water is at least 1", and process for 15 minutes.
Remove them carefully and set in a draft free area, to let them cool down slowly.
Make sure the seals are sealed, if not you can go thru the water bath again.
Makes about 11 pints.
