Recipe Introduction
These cutlets are rather simple to make, and are soooo yummy and tender! That said, be sure to have the fan on, the window open, and prepare to hear the smoke alarm, because when the buttery cutlets hit that hot pan, there WILL be smoke!! You may agree, it is worth it!
List of Ingredients
fresh - Chicken Cutlets, Cajun style
1/4 c. sweet butter
1 tbsp. freshly squeezed lemon juice
1/4 tsp. crushed dried thyme
1/4 tsp. crushed dried oregano
1/4 tsp. cayenne pepper
1/4 tsp. ground black pepper
salt to taste
4 boneless skinless chicken breast halves, pounded thin
Melt the butter in a small saucepan over a low heat.
Add lemon juice and seasonings and continue to cook for several minutes over a low heat until the herbs soften.
Heat a large cast iron skillet to high.
Turn on your exhaust fan if you have one.
Coat both sides of the cutlets well with the butter mixture.
Cook the cutlets for several minutes on each side.
When done, they will be black on the outside and tender and juicy on the inside.
