Chicken Curry from Pakistan
1 large chopped or sliced onion
vegetable or canola oil
3 tbsp. curry powder
1 bay leaf
1 pound fresh chopped tomatoes, (or one 14 1/2oz. can, diced)
8 pieces chicken, with or without skin
1 15oz. can tomato sauce
1 can of water, using the tomato sauce can
3 chopped garlic cloves
1 chicken bouillon cube
Cayenne pepper to taste
salt and pepper to taste
Recipe
Saute the onions in the oil until translucent.
Add the curry and bay leaf.
Stir for about 30 seconds, until spices are mixed.
Add the fresh tomatoes and chicken and cook for 3 - 5 minutes more.
Add tomato sauce, water, garlic and the bouillon cube, and bring to a boil.
Cover, reduce the heat and simmer for approximately 40 minutes.
Uncover, and continue to cook another 40 minutes or until the sauce is somewhat thick.
Serve over rice. Sprinkle with the Cayenne pepper and the salt and pepper.
Makes 8 servings.
