    fresh - Chicken Florentine w/Alfredo Sauce

    2 tablespoos diet butter
    2, 8 ounce each boneless, skinless chicken breasts
    1, 10 ounce package frozen chopped spinach, thawed squeesed dry
    1 cup cooked brown rice
    1/4 teaspoon ground nutmeg
    2 tablespoons grated Parmesan cheese

    for the Alfredo sauce:
    (this is Alfredo Sauce #5 in my sauce listings)
    1 cup evaporated skim milk
    1 tablespoon diet butter
    dash garlic powder
    1/2 teaspoon dried parsley
    ground black pepper to taste
    1/4 cup grated Parmesan + Romano cheese mix or either
    2 tablespoons flour

    Make sauce first. Heat milk in saucepan over medium heat.
    Be sure not to burn or scald milk. Add the butter, garlic,
    parsley and pepper. Gradually add the cheese while stirring
    constantly with a wire whisk. Do the same with the flour.
    Reduce heat to low, stirring frequently. Simmer about 10
    minutes, or until sauce thickens enough to coat a spoon.
    Transfer to gravy dish when ready to serve.

    Heat butter in a large non stick frying pan over a medium heat.
    Cook chicken for 4 - 5 minutes on each side until browned.
    Remove and cut in diagonal 1 inch thick slices.
    Combine spinach, rice, nutmeg and Parmesan cheese together in
    a saucepan. Heat 3 - 4 minutes until warm. Spread spinach
    mixture evenly on 4 plates. Divide chicken slices onn top of spinach.
    Serve with alfredo sauce.
