    leftover - Chicken Fritters

    for fresh honey mustard sauce:
    1 c. dry powdered mustard
    1 c. white wine vinegar
    2 beaten eggs
    3/4 c. honey
    1/4 tsp. salt

    for the fritters:
    2 c. cooked, finely chopped chicken
    1 tsp. salt
    3/4 tsp. dried parsley
    1 tbsp. lemon juice
    1 1/4 c. flour
    2 tsp. baking powder
    1 beaten egg
    2/3 c. milk
    vegetable oil for frying

    for the honey mustard sauce:
    Combine the mustard and vinegar in a small bowl and set aside
    for at least 30 minutes or overnight.
    Use a double boiler over a medium heat to blend the mustard/
    vinegar mixture, eggs, honey, and salt.
    Cook about 20 minutes until thickened, stirring often.

    for the fritters:
    Use a large bowl to mix the salt, parsley, and lemon juice together.
    Add the chicken and toss to coat. Set aside to marinate for 15 minutes.
    In another large bowl, stir together the flour and baking powder,
    In a small bowl, mix the egg and milk together. Then add to the
    flour mixture and stir to blend well.
    After the 15 minutes has passed, add the flour mixture to the chicken
    mixture and mix well.
    Use a large frying pan to heat 1" of the oil to 375F. Drop the batter
    by tablespoonfuls into the hot oil and fry, without crowding, until
    golden brown, about 2 minutes. May have to do this in batches. Drain
    on paper towels and serve with the honey mustard for dipping.
    Makes 6 servings.
