3 tablespoons butter or margarine, softened
1/2 teaspoon garlic salt
1 teaspoon parsley flakes
6 boneless skinless chicken breasts,
3 tablespoons Olive oil
1/4 teaspoon season salt
1 cup cracker crumbs
1/3 cup evaporated milk
toothpicks
lemon wedges
Mix well butter, garlic salt and parsley.
Shape like a stick of butter. Cover and freeze one hour.
Place chicken on a sheet of waxed paper.
Flatten with a meat mallet of rolling pin to 1/4 inch thickness.
Place 1/6 of butter mixture in the center of each breast half.
Fold long sides of chicken over butter.
Fold ends over and secure with toothpicks.
Preheat oven to 425 degrees F.
Coat 13x9x2 inch baking pan with oil.
Combine crumbs and season salt on a sheet of waxed paper.
Dip chicken into milk and then coat with crumb mixture.
Place chicken , seam side up, in pan.
Bake 15 minutes.
Turn and bake an additional 10 minutes.
Serve with lemon wedges.
