    Serve with crusty bread and a salad.

    List of Ingredients

    fresh - Chicken Lasagna

    1 box lasagna noodles, cooked al dente and drained
    3 c. ground chicken
    1/2 c. chopped onion
    2 cloves minced garlic
    salt and pepper
    1 pint cottage cheese, whipped smooth
    1/2 c. Cheddar cheese
    1/2 c. freshly grated Parmesan cheese, plus extra for sprinkling
    1 c. shredded Mozzarella cheese, plus extra for sprinkling

    for the sauce:
    3 tbsp. butter
    3 tbsp. flour
    2 1/2 c. milk
    3/4 tsp. dried parsley or 1/4 c. chopped fresh
    1/4 c. chopped mushrooms, optional
    1 tsp. garlic powder
    salt and pepper to taste
    (Or for a fast sauce:
    Use 2 cans cream of chicken soup and 1 1/2 c. milk with the rest of the ingredients,
    or for a really quick sauce:
    use one can cream of chicken soup and one can of cream of mushroom soup along with the butter and 1 1/2 c. milk, omitting everything else.)

    Preheat oven to 350. Coat the bottom of a 9x11x2" baking dish with non stick cooking spray.
    Saute the chicken in a large skillet over a medium heat until browned.
    Add the onion, garlic, salt, and pepper and cook until the onions are tender, about 5 minutes.
    Mix the cheese together in a separate bowl.
    Make the cream sauce combining all ingredients (which ever way) in a small saucepan, until well combined and warm.
    Layer 1/3 of the noodles, then 1/3 of the meat mixture, then 1/3 of the cheese mixture, and 1/3 cream sauce.
    Repeat until all ingredients are gone.
    Sprinkle some extra Mozzarella and Parmesan cheese over the top.
    Cover and bake for 35 minutes. Remove the cover and bake 10 minutes more.
