fresh - Chicken Piccata #3
2, 5 - 6 ounce each chicken breasts,
...thinly pounded or butterflied
flour
salt and pepper
2 ounces Olive oil, (1/4 cup)
4 ounces white wine, (1/2 cup)
1 ounce Balsamic vinegar, (1/8 cup or a coffee measurer)
5 ounces butter, (3/4 cup or 1 1/2 sticks)
2 ounces jarred capers, (1/4 cup)
4 pinches dried chopped parsley
Heat a frying pan on a high heat. Dust chicken in flour. Season with salt
and pepper and saute in the oil for 2 minutes. Turn and cook 2 more minutes.
Add the wine and burn it off. Remove the chicken and set aside. Add the
vinegar, butter, capers and parsley; and mix in the pan. Serve chicken topped
with this sauce. Makes 2 servings.
