fresh/rolled - Chicken Rollups w/Bacon + Cream Cheese
8 boneless skinless chicken breasts; pounded thin
8 ounces cream cheese; softened **
2 teaspoons garlic powder
4 teaspoons dried parsley
4 teaspoons chives
16 slices bacon **
Pre-heat oven to 350 degrees F. Spread a layer of cream cheese on the
inside of each pounded chicken breast. Season to taste with the garlic
powder, parsley and chives. Roll up, starting with the small end. Wrap
two slices of bacon around the rolled-up chicken breast. Secure with a
skewer. Bake 30-40 minutes in a 350 degrees F oven. Turn oven up to
broil 5 minutes to brown bacon. Serve with rice and vegetables. Makes
8 servings.
