fresh - Chicken Waikiki
chicken, 2 legs and 2 split breasts
flour, salt and pepper mixture for dredging
oil or shortening for browning
1, 16 ounce can pineapple chunks, drained,
...reserve juice
1 cup white granulated sugar
2 Tablespoons cornstarch
3/4 cup cider vinegar
1 Tablespoon soy sauce
1/4 teaspoon ground ginger
1 chicken bullion cube
1 green pepper sliced into rings
Dredge chicken in flour, salt and pepper.
Brown in oil or shortening.
In saucepan, mix sugar, cornstarch, cider
vinegar, soy sauce, ginger, bullion cube
and juice from pineapple together. Heat
and stir constantly until boils and thickens.
Place chicken in shallow baking dish and
cover with sauce. Bake for 30 minutes at
350 degrees F., uncovered.
Add pineapple and pepper rings and bake,
covered, for 30 minutes.
Makes 4 - 6 servings.
Note:
I have also added a small can of mandarin
oranges to this for an added flavor.
When doing so, I add the juice with sauce
mixture, and then add oranges at the end
with pineapple and green pepper.
