    fresh - Chicken Yum Yums

    1 c all-purpose flour
    1 tb black pepper
    4 skinless boneless chicken
    -breast halves
    1/3 c soy sauce
    1/2 c granulated sugar
    1 tb crushed garlic; al hache
    2 ts crushed red peppers
    1/2 c vegetable oil

    Heat oven to 350ø F.
    Combine flour and pepper in a bowl or Ziploc baggie. Cube chicken
    into
    about 1-inch pieces. Coat chicken pieces in flour mixture until fully
    coated.
    Heat oil in frying pan until hot enough to sizzle when adding a
    sprinkle of
    flour. Add the floured chicken and brown on all sides. (Do not let
    it get
    fully cooked, but just until it gets a nice brown crust.) Drain the
    pieces
    on a paper towel.
    In a 13x9-inch baking pan, place pieces of chicken in a single layer.
    In a measuring cup or small bowl, mix the soy sauce, sugar, crushed
    garlic
    and red peppers. Stir so that it is well blended and the sugar is
    mostly
    dissolved. This will be a bit thick; it will become a glaze and gel
    up
    during the cooking period. Pour the glaze over the chicken and mix
    around
    so all the pieces are coated. Bake for 30 minutes at 350 degrees F.,
    stirring the
    pieces every 10 minutes to get them evenly coated with the glaze.
    Serve warm with toothpicks for spearing.
    Yield: 4 Servings
