fresh/rolled - Chicken + Broccoli w/Herb Sauce
6 chicken breast halves; skinned & boned, pounded thin
2 tablespoons Olive Oil
6 to 12 spears broccoli; blanched
6 slices Swiss cheese
for the sauce:
1 cup chopped onion
2 tablespoons butter
2 tablespoons flour
1/2 cup chicken broth
1/2 cup milk
1/4 - 1/2 teaspoon dried sweet basil
1/4 teaspoon celery salt
1/4 teaspoon ground white pepper
Preheat oven to 350 degrees F.
Grease an 11x7x2 inch baking dish.
Brown one side of chicken in oil.
Place 1 slice cheese and 1 or 2 broccoli spears on each.
Roll up, securing with toothpicks if desired.
Set aside.
for the sauce:
Fry onion in butter until tender.
Stir in flour until smooth.
Stir broth and milk in slowly and cook until thickened.
Add basil, celery salt and pepper.
Pour half the sauce into baking dish,
Top with chicken and pour remaining sauce over to0p.
Cover and bake 20 minutes.
Uncover and bake another 10 minutes or until chicken is
no longer pink.
Makes 6 servings.
