1 onion
few stalks of celery
1 fryer chicken
2 1/2 - 3 1/2 teaspoons salt
4 cups flour
1 - 3 eggs
1 - 3 tablespoons fresh parsley
few cans of chicken broth
half + half
pepper to taste
Slice onion and celery, and puree in blender.
Place chicken in large pot, and add vegetable puree and 2 tsp. salt. Cover with water.
Simmer until chicken is cooked, making sure there is always have enough water to cover the chicken.
Remove chicken from broth. Let cool, then put both into refrigerator to let them cool. When cool, take the meat off the bone.
Put broth into medium to large pot, and bring to a boil.
Put flour into a large bowl, and make a well. Pour 1 c. warm broth, 1 egg, 1/2 tsp. salt, and 1 tbsp. parsley into well. Mix ingredients in the well ONLY using a fork until a soft dough forms. Let it rest.
On a well floured surface, roll out the dough (flipping it while rolling) until very thin.
Flour dough, and cut into parallelograms, (diamond shaped). Put several parallelograms into the boiling broth. When they float to the top, they are done. Place dumplings into a crock pot on low. If broth level gets low before all dumplings are cooked, add chicken broth from a can.
After all dumplings are done, place chicken, half and half, and pepper on top and mix. Let warm before serving.
