    fresh - Chicken + Dumplings #3

    Recipe Introduction

    You may think these are the best tasting dumplings you've ever had and they are fairly easy to make.

    List of Ingredients

    fresh - Chicken + Dumplings #3

    2 - 3 lbs. boneless, skinless fresh chicken
    1 chopped onion
    3 stalks chopped celery
    1 grated carrot
    1 tbsp. salt
    1/2 tsp. pepper
    2 c. flour
    broth from the cooked chicken

    Cook the chicken in a good sized stock pot with the onion, celery and carrot. Let cool slightly.

    Remove the chicken and cut into chunks. Place back into the broth and set aside.

    Combine the salt, pepper, and flour in a mixing bowl.

    Pour in just enough of the chicken broth from the pot until it is of a consistency to roll.

    Roll out 1/8" high on a floured surface.

    Cut into strips, then squares.

    Drop the noodles into boiling broth or place in with the cooked chicken and broth.

    Cover and simmer for 10 minutes.
