marinade:
1/2 cup Olive oil
1/2 cup fresh lime juice
1 tablespoon chili powder
1 teaspoon garlic pepper
1 teaspoon salt
cayenne pepper if yo want it spice - to your taste,
...this is hot, be careful
Place whole chicken into large ziplock bag. Mix the
marinade and pour over chicken. Seal and allow to
marinate overnight or for 24 hours, turning the bag
several times to marinade chicken well.
Allow chicken to come to room temperature for about
1 hour before roasting. She used a roasting appliance
and cooked for 1 hour 10 minutes, basting several times
with the leftover marinade.
Garnish with lime slices, green onion, cilantro and olives.
Serve with Mexican Rice, (listed under rice category).
