fresh - Cinnamon Broiled Chicken w/Raita
salt & pepper
1/4 tsp cinnamon
1 cut-up chicken, about 3 pounds
1 cucumber, about 3/4 pound, peeled, seeded & chopped
1/4 C whole-milk plain yogurt
1/4 C sour cream
2 Tbs chopped fresh cilantro or parsley
1/4 tsp ground cumin
Preheat broiler. In small bowl, mix 1/4 tsp salt, 1/4 tsp pepper &
cinnamon. Sprinkle on chicken. Put chicken, skin side down, on
broiler pan & broil about 6" from heat for 15 min. Turn chicken &
broil until skin is crisp & brown, about 15 min longer.
Meanwhile, in small bowl, stir together cucumber, yogurt, sour cream,
cilantro, cumin & 1/4 tsp each salt & pepper. Serve chicken hot,
with raita on the side.
Goes well with yellow rice.
Serves 4.
