    fresh - Country Fried Chicken Breast Strips

    May also be made with turkey. fresh - Country Fried Chicken Breast Strips

    5 pounds chicken breast, boneless and cut into strips
    1, 16 ounce bottle Italian dressing
    1/2 teaspoon lemon pepper seasoning
    dash or two of liquid smoke
    2 beaten eggs
    1 1/2 - 2 cups milk
    salt and pepper to taste
    2 cups flour
    Olive oil as needed for frying

    for gravy:
    2 tablespoons butter
    2 tablespoons flour
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper,
    ...or more to taste
    1 cup whole milk

    Mix Italian dressing, lemon pepper and liquid smoke together.
    Cover and marinate chicken strips for 8 hours or overnight.
    Remove and discard marinade.
    In small bowl, beat eggs into milk.
    In 2nd stir together salt, pepper and flour.
    Dip chicken strips in egg mixture, then into flour mixture.
    Fry in oil until golden brown.
    Drain on paper towels.
    for gravy:
    Melt butter in skillet. Quickly whisk in flour, salt and pepper.
    Slowly whisk in milk. Heat and stir until thickened.
    Serve strips with gravy over top.
    Makes 8 to 10 servings.
