    leftover - Creamy Chicken

    4 - 6 c. precooked shredded, skinless, boneless, chicken breasts
    2/3 c. melted butter
    2/3 c. flour
    1 14 1/2oz. can chicken broth
    1 c. milk
    1/2 c. shredded carrot
    1 c. frozen peas
    1/2 c. diced green pepper
    1/2 c. diced red pepper
    1/2 c. diced onion
    salt and pepper

    Melt butter in large skillet.
    Add flour, and stir constantly until a paste is formed.
    Pour chicken broth in, a little at a time, stirring constantly.
    Pour in milk a little at a time, stirring constantly until creamy.
    Stir in chicken, carrot, peas, peppers, and onion.
    Simmer on med./high heat for about 10 minutes, stirring several times to prevent from sticking.
    (To make the sauce thinner, pour in a little more milk and stir until thoroughly absorbed. Repeat if necessary until it reaches the thickness you want.)
    Add salt and pepper to taste.
    Reduce heat to low and simmer about 15 minutes more, stirring several times.
    (Serve on noodles, biscuits, rice, cornbread, baked potatoes or toast.)
