fresh - Creamy Chicken + Dumplings
1 whole chicken
2 stalks celery, cut into pieces
1 onion sliced
2 chicken bouillon cubes
1 can cream of chicken soup
1 can cream of celery soup
1/2 t. salt
2 C. all purpose flour
1 tbsp. sugar
2 t. baking powder
1/4 C. butter, softened
Place chicken into large cooking pot, add onion, celery, bouillon cubes
and a few shakes of pepper. Add enough water to cover the chicken
about 3/4 of the way. Boil chicken covered for 35 min. turn over in pot
and cook an additional 40 min. Remove chicken from liquid and set aside.
Skim fat off the broth.
(***For best results...boil chicken a day early and have time to chill the
broth, this makes it easy to skim all the fat.
Debone chicken and tear into bite size chunks. Set aside along with 3/4
cup of broth. Leave remaining broth in the large pan.
Combine flour,sugar, baking powder salt. Cut in butter. Add reserved broth,
stiring with a fork until dry ingredients are moistened. Turn dough onto
well
floured surface, and kneed just a few times.
Pat dough to 1/2 inch thickness. Cut into 2x2 inch squares. May need to
sprinkle with additional flour.
Add soups to the broth. Bring to a boil, stir well. Drop dough in, 1 at a
time,
make sure to slightly dunk each dumpling in the broth. This will prevent
them
from sticking together. Reduce heat to low, cover and simmer for 10 min.
Stir in chicken and serve immediately.
