6 boneless, skinless chicken breasts
1/4 c. prepared mustard
1 c. dry bread crumbs
1/4 c. grated Parmesan cheese
1 tbsp. onion powder
1/2 tsp. chicken bouillon granules
1/4 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. dried oregano
2 - 3 tbsp. melted butter
6 tbsp. sour cream or plain low fat yogurt, optional
Preheat oven to 350. Lightly grease a baking pan.
Brush the chicken breasts with the mustard and set aside.
Use a large shallow dish and stir together the bread crumbs, Parmesan cheese, onion powder, bouillon granules, salt, garlic powder, and oregano.
Roll the chicken in the bread crumb mixture to coat.
Place the chicken in the baking pan, with the meaty side up.
Drizzle the chicken with the melted butter.
Bake, uncovered, for 45 - 50 minutes or until the chicken is fork tender.
Arrange the chicken on a serving dish and top with the sour cream or yogurt, if using.
Makes 6 servings.
*This recipe makes a lot of breading. If you're using smaller chicken breasts, you may want to cut the breading ingredients down.
