fresh - Fried Chicken
1 cup flour
2 teaspoons garlic powder
1/4 teaspoon ground black pepper
1/8 teaspoon ground poultry seasoning
1/2 teaspoon celery salt
1/4 teaspoon ground paprika
1 1/2 to 3 pounds chicken pieces of your choice
Combine flour with seasonings in a zip lock type bag.
Rinse chicken. Place a couple chicken pieces at a time
in the bag. Shake until coated.
Starting with meaty pieces, place in a heavy skillet
in hot oil with part butter, if you wish. Turn to brown
evenly (15 to 29 minutes).
Reduce heat, cover tightly, and cook slowly 20 to 40
minutes until tender.
Uncover for the last 5 or 10 minutes to re crisp.
