Recipe Introduction
A Jamaican dish with a spicy blend of herbs, vinegar, and a habanero pepper.
May be served with rice or noodles.
List of Ingredients
fresh - Jerky Chicken Dish
1 tsp. finely chopped onion
3 tbsp. brown sugar
4 tbsp. soy sauce
4 tbsp. red wine vinegar
3/4 tsp. dried thyme or 2 tsp. freshly chopped
1 tsp. sesame oil
3 chopped garlic cloves
1/2 tsp. ground allspice
1 sliced habanero pepper
4 boneless, skinless chicken breasts, cut into 1" strips
Place the onion, brown sugar, soy sauce, vinegar, thyme, oil, garlic,
allspice and pepper strips in a blender/food processor. Blend until a smooth
consistency.
Place the chicken strips into a large resealable type bag.
Pour 3/4 of the sauce in the bag. Set the rest aside.
Squeeze all the air out of the bag and seal.
Refrigerate to marinate for at least 1 hour.
Preheat the broiler of your oven.
Remove the chicken from it's marinating bag, and discard the bag/marinade.
Broil the chicken for 10 - 15 minutes, until it is no longer pink on the
inside, turning once to ensure even cooking.
Place the remaining 1/4 of the sauce in a small saucepan and heat.
Dribble the sauce over the chicken when served.
Makes 4 servings.
