Recipe Introduction
NOTES : Bite-sized chunks of marinated chicken are grilled on
skewers,
then served with a spicy relish made from
cucumbers, garlic, and
chile. The chicken, a healthy, low-fat alternative
to beef kabobs,
absorbs the lime juice marinade well. Both the
chicken and the
relish can be prepared ahead, and the meat grilled
right before
serving. Be sure to use rubber gloves to protect
skin while
preparing the fresh chile.
List of Ingredients
fresh - Spicy Chicken Kabobs w/Cucumber Relish
1 pound boneless skinless chicken breast halves
1 teaspoon minced garlic
1/2 cup lime juice
1 tablespoon honey
1 tablespoon grated gingerroot
1 tablespoon grated lime rind
for the relish:
1 cup peeled, seeded cucumber -- finely diced
1 teaspoon minced garlic
2 tablespoons minced cilantro
1/2 cup seeded tomatoes -- finely diced
1 small jalapeno chile -- seeded and minced
2 tablespoons rice vinegar
1. Cut chicken into 1-inch pieces and place in a large, shallow pan.
In a
small bowl mix together garlic, lime juice, honey, ginger, and rind.
Pour
over chicken and let marinate for 30 minutes, tossing frequently.
2. Preheat broiler or grill. Assemble chicken on short skewers.
Broil or
grill until browned (5 minutes). Serve immediately with Cucumber
Relish.
for the relish:
Combine all ingredients in a bowl. Let marinate 15 minutes before
serving.
Makes about 2 cups.
