fresh/stuffed - Chicken Breast w/Bacon Stuffing
2 cake Purity Hard Bread,
(I think this is a brand of single serving loaf of bread)
6 c. chicken stock
2 8oz. boneless, skinless chicken breasts
2 finely diced green onions
1/2 diced red pepper
2 stalks thinly sliced celery
6 tbsp. Parmesan cheese
4 slices bacon, cooked almost crisp
1 tsp. poultry seasoning
salt and pepper to taste
Soak the bread overnight in chicken stock.
After hard bread has soaked, squeeze all the juice from bread.
Reserve stock.
Break bread into small pieces and place in a medium size mixing bowl.
Add green onions, pepper, celery, cheese, bacon, poultry seasoning
and salt and pepper to taste. Mix thoroughly. Set aside.
Coat a baking sheet with cooking spray.
Place chicken between waxed paper and flatten with a mallot or such.
Divide stuffing in 2 and form into 2 balls.
Place the balls in the center of the breasts.
Lift the edges of the chicken breast up around the stuffing.
Turn the chicken breast upside down, and secure with toothpicks.
Season with salt and pepper to taste.
Lay chicken breast on baking sheet.
Pour a little of the stock on the sheet and cover.
Bake at 375 for 15 - 20 minutes.
Uncover and continue baking for 5 - 10 minutes until the breast is golden.
Makes 2 servings.
