    fresh - Brown Sugar Baked Chicken + Oven Fries

    I have made this a few times and I just love it!
    For me, it is addictive. I don't usually make the
    fries, instead I make mashed potatoes, yummy!

    fresh - Brown Sugar Baked Chicken + Oven Fries

    1 1/2 pounds baking potatoes, scrubbed and cut
    ...lengthwise in 1/2 inch thick sticks
    1 Tablespoon vegetable oil, (I use extra light Olive)
    3 Tablespoons light brown sugar
    2 teaspoons chili powder
    2 teaspoons freshly grated orange peel, (I don't
    ...have any fresh oranges so I used 1 teaspoon ground
    ...orange rind)
    1/2 teaspoon + 1/2 teaspoon salt, separated
    1/4 teaspoon ground black pepper
    2 1/4 pounds chicken, (8 drumsticks)

    Position racks to divide oven in thirds.
    Heat to 450 degrees F.
    Line 2 rimmed baking sheets with foil, for easy cleanup.
    for potatoes:
    Set a wire rack on 1 baking sheet. Coat rack well with cooking
    spray. Put potatoes and oil in a large bowl; toss potatoes to coat.
    Place on rack, overlapping if necessary. Bake on top oven rack
    for 10 minutes.
    for chicken:
    Mix sugar, chili powder, orange peel and 1/2 tsp. salt in a
    large plastic zip top bag. Add chicken. Seal bag and shake until
    chicken is coated. Put on the other baking sheet.
    Place chicken on lower oven rack and bake 25 to 30 minutes or until
    potatoes are tinged golden brown and chicken juices run clear when
    pierced with fork.
    Drizzle any juices in baking sheet over the chicken.
    Sprinkle potatoes with remaining 1/2 tsp salt and the pepper.
    Makes 4 servings.

    Per serving: 470 cal, 36 g pro, 42 g car, 3 g fiber, 17 g fat (4 g
    saturated fat), 109 mg chol, 718 mg sod
